I'm guessing it can be done, but I was wondering if I could get a reply from someone who has done it or seen it done:
Can Linux be installed on a Pentium Pro machine? If so, are there any quirks/pros/cons to doing so?

havent tried a pentium pro, but should be easy enough as any other cpu, just choose pentium pro cpu when compiling the kernel

It should be fine. If there are any quirks, it would be because of weird/buggy hardware. Xwindows would be a bit sluggish. Having RAM would make a big difference. I'd say 16 MB is a good number (you should notice a difference between 8 and 16, but maybe not between 16 and 32).

Pentium Pro uses the P6 core, the same core as the Pentium II, III, Celeron, etc. You won't have any problems. I have/had two PPro systems, 64 and 128MB. Both run very quickly.
