Does anyone know the difference between Cyrus IMAP Server and just plan IMAP.? What would be the benefit of using Cyrus IMAP Server?

they (alt the different imap servers - or different of any server for that matter) have different configuration files, different scalability, etc.
you need to go to the web sites for the different ones you are interested in trying and research what one fits best with what you want to do.
i personally use UW-IMAP. just because it was in apt and was easy to set up.
