The whole point of LaTeX (I could be wrong) is 'What you get is what you mean'. It is totally logical and structured. It can be used to output ps, pdf, html format. Doc format? I don't talk about that and I believe anybody who loves Linux dislike that.
For spell checking, ispell, aspell.......
One thing about LaTeX thoug I notice is that it is too (??? should I say very) suitable for math typsetting and might need to polish its support for other general purpose typsetting.
You can try ConTeXt if you are not really interested in writing thousands of equations.
