I'm not sure if it is standard or not, but most distributions come with a 'chfn' program that will allow you to change that info. Also, if you have a file named .plan in your home directory, that will be displayed as well.

As A.Buza pointed create or edit .plan .project and i belive .mail files that fingerd reads when invoked.While at it try man finger for more information...and keep in mind that fingerd is an older protocol and might have root holes that could be hacked.Hope this helps.
