I noticed that I could like locate a place during the kernel configuration to tell the kernel to use UDMA. Is this a now inherent feature of the kernel.

I'm using UDMA100 on the motherboard's IDE.

Look under ata section, You probably have to look specifically for the chipset of the IDE controller
