Common e-mail tools:
sendmail (http://www.sendmail.net/) - postfix (http://www.postfix.org/) - sends mail to local users (and internet when configured correctly)
fetchmail (http://www.tuxedo.org/~esr/fetchmail/) - gets mail from internet pop accounts
procmail (http://www.procmail.org/) - sorts and delivers into separate mailboxes
mutt (http://www.mutt.org/) - mail client that sucks less than all the others

You forgot to mention Sylpheed or Sylpheed Claws. Evolution is good and looks like Outlook, but Sylpheed is gtk-based and it's way faster to load up, it just doesn't looks quite as nice. Or mutt... well that's console based, that's as 'simple' and 'quick' as it can get. Hmm.... is it just me or there should be an NHF on frecuently 'needed' software by newly Linux converted users?

If your connecting to a POP server, just about anythgn will do. If your connecting to an Exchange server, your a little more limited. BUT, I use KMail (from KDE) to connect to out Exchange server at work and to my ISP's POP server at home.
