What about 'headless' mp3 players? I've been considering building an 'in car' mp3 server out of on old laptop and a large hard disk.

mpg123 (http://www.mpg123.de/) perhaps? It's what I used before I installed X (this is LFS, so X took quite a while to compile...).

It probably wouldn't be hard to come up with a script that went through every .mp3 file in a directory (or even, with find, in a set of subdirectories), and ran them all through mpg123.
