How do you compile a new kernel and make sure that you have all the options selected as your currently installed Kernel?
I have read the NHF, but it does not touch on this, it just says 'select your modules'.

The whole point of compiling your own kernel is to do away all the extra crap that comes in the stock kernel, most of which you don't need. You'll want to read The (freshly updated) Kernel HOWTO (http://www.linuxdoc.org/HOWTO/Kernel-HOWTO.html) for the whole scoop. It isn't hard to do if you study up a bit.

as long as you know your hardware and what drivers you need you'll be fine, just read the help for each option if you're not sure about it

Its just that when i got my adsl working it was at the expense of my eth0 and some other items.
I am reading up on it now.
