OK, I now have everything working, but I want ICE to be my default WM, so how is that changed. And how do I add icons to the desktop? That is all.

Create a ~/.xsession file for the user you'll be using X as, and put "icewm" in that file.
That's assuming you want to run just Icewm alone, instead of through GNOME or KDE. If the latter is the case, you'll want to use GNOME or KDE's configuration utilities.
