I am a linux newbie and (in the process of building a new system) and ran into an Adaptec 2940 Ultra(50 pin) that I can get from a friend "cheap"- Will this card run under RH-7.1? Linux is not listed on the side of the box??? If it won't work can you recommend a good card.

When I do a search the only info that I found is for the 2940 Ultra 2 Wide

yes, redhat has a nice list of compatible hardware

Pretty much any Adaptec card you'll find will be compatible in Linux, they have very good support.
