It depends what Display Manager you're using.
Most display managers work from /etc/inittab. Near the end, you should see the line that invokes the display manager. Comment it out.
Some display managers run from init scripts. This is gross. Post back if /etc/inittab doesn't have a line that invokes the display manager, and I'll explain how to disable the init script.
