I have no /etc/inetd.conf file in RH7, but I do have an xinetd.conf which tells me very little. Where is my config file so I can shut down several daemons? Thanks

That directory is where you will find the files you are looking for. Also, you can comment out or delete the daemons that you wish to disable in your startup directories. justlinux.com
