How do you play the .wav file? Is it with the "play" command? Is it with a GUI interface? A little more info please.

You shouldn't have to reboot if you can find the process and kill it. It's not Windows, after all! ;)

instead of rebooting try
ctrl + alt + backspace that kills everything.

next time use media player or your fav. wav player. It should be listed under Programs/Multimedia

Your computer is probably set up to use esd to play files of type *.wav.

Esd is the Enlightened Sound Daemon and simply plays what it is told to. There are graphical sound players out there that you can open up first and then play the wave. Then you would have a stop button to hit. There is a way to change the default, but I'm not at my Linux box at the moment and haven't had a need to change it. :)
If you want a list of sound players check out Freshmeat.net (http://freshmeat.net).

Nothing on the Taskbar? Does Gnome have a 'System Tray' as KDE and Windows does. Could be in there. Double-click or right-click?

Next time it gets stuck like that, open up "GTop" (should come with Gnome). GTop shows a list of all processes on your comp. Find the one that's playing the sound (shouldn't be too difficult) and right-click on it. There should be a "kill now" option. That should stop it. But like everyone else says, that's not the best way to do it...get a wav player. I use XMMS, a winamp clone.

open up an xterm and type "gtop" to make sure you have it. If you do and you can't find it under the menus, you can make a launcher to it on your desktop. As for file associations, try opening up the Gnome control center and taking a look around for what program handles what.
