Whats the best way to set this up using Red Hat 7.0 and win2k?

use LILO to dual boot both. Install on your MBR, Works like a charm. fdisk /mbr if you want to take it off so just Windows boots.

Backup your data. Install win2k first then Redhat. And make a boot disk for each!!
