What do I put in the IP field in linuxconf if I want to have a dynamic IP address over a LAN?

Not sure... I've never used linuxconf.
Try running netcfg or netconfig as root, and you should be able to select dhcp in there somewhere...

when you run linuxconf there is a button/switch for enabling DHCP
