This is just a quickie. I would like to develop an application similar to the ones used in most of your small, medium, and large businesses. For example when you go to a fast food food restaurant and they have a text-like application for food orders on a terminal. Another example, basically any business with an inventory of their products. Like for instance Lowe's. If you have peered at their computers they have text-based applications which they use.
Question: Which companies actually develop these kinds of software?

You're looking for point-of-sale development shops, if I understand your intent correctly.
Loads of them around.
Some of that stuff is developed in-house as well.

From what I've seen in most cases they are....though, IIRC, there may be an OS POS project on sourceforge.net

I always thought thoose was scripts run over a shell of some sort
They may just have a small kernel and it is set to load then run the program
