im a linux noob and i want to run it on an amd64, what is the easiest to install and is a final release.

SuSE would be a good choice.

There's always Mandrake 9.2. Here's one site to get it: ftp://ftp.phys.ttu.edu/pub/mandrake-iso/amd64

I can't say too much about it, as I'm still using a 32 bit processor(or 2).

The fedora project has also recently released a port of Core 1 to the AMD64 processor.
