You can install several distros on one hdd or one distro over several hdd's. You can use RAID to create a large volume that spans disks or just use the space to mount seperate mount-points, e.g. '/' '/var' '/home' '/usr' '/usr/local' etc. You can even install the identical distro to two seperate hdd's and have one version as stable and one as bleeding edge (read: potato / sid).
