if you are buying a motherboard, it won't come with any RAM (RAM isn't ever "built-in"), you will have to purchase that separately.

the only thing i have heard to avoid with linux, is to avoid nvidia chipset motherboards.

Newer kernels have support for the nForce chipsets from nVidia, but they might require you to recompile the kernel. I tend to stick with VIA chipsets, even with all the problems I've heard people say about them...I've never had a problem with VIA chipsets in Linux.

I have had really good luck with ASUS boards with the VIA chipsets. Alot of these come with onboard video, sound and LAN...but their BIOS is excelllent and these can be turned off.

Look into getting a dual CPU mobo as well - very useful for extending life. My 5 year old dual 450 is still going strong and will likely last me until I get broadband (and therefore have an excuse to get the new games that require more horsepower). And broadband is at least a year (or more) away. Hate living in the boonies at times.

As far as manufacturer, I really like Tyan.
